Leanne, This looks great. I can’t wait to try it with my family. My youngster does NOT like onions, but when they are in big chunks like this she can pick them out easily (and will ~ but I like that she gets the flavor still). Thank you for sharing this!! I can’t stand marshmellowy sweet potatoes. I LOVE savory sweet potatoes! I can’t wait to try this!
I will try that Leanne. I also make a version that is similar without onions. It includes whole peeled garlic cloves and fresh rosemary. The garlic roasts and gets very sweet. The only thing I would do a little different is toss the potatoes in the oil after sprinkling it over them so that all of them get coated. Can’t wait to try your version.

Whenever we host Turkey Day at my house (alternating years), my (now) 80-year old father asks if I will be making this – - he has even asked for the recipe so he can scale it down and make it for himself at home. So simple, so delish…..have been using this for YEARS, ever since it was only written on FlyLady’s website. No greasy pool of slop, no sugary toppings, just yummy sweet/savory roasted veggies !
